The Gainesville Bakery That Believes Life Is What You Bake It

One of Gainesville’s newest bakeries is making life easier for those who like things baked a little bit different than most.
Lemkos Bakery creates made-to-order baked goods, focusing on vegan, gluten-free and peanut-free cakes, cookies, and more.
Kat Wasula, the owner and baker of Lemkos Bakery, started the business in July, and has gained popularity in Gainesville through her unique food options. They offer a menu that changes based on customer requests and comments, making it hard for something not to catch customers’ eyes. Best selling Lavender Cookie sandwiches, two sugar cookies made with lavender with white icing in the middle, probably won’t be changing anytime soon.
For those who can’t have most normal baked goods, like Jess Muron who eats gluten-free, Lemkos offers options that aren’t available everywhere.
“The combination of flavors and the ability to create gluten-free desserts that aren’t too dry or too heavy is awesome,” Muron said.
Without a physical location for the bakery, Wasula travels to the Union Street Farmers Market every Wednesday to serve her products to customers. The market has been incredible for the bakery, practically selling out weekly and gaining many repeat customers.
“They really give a lot of freedom to sell and create your own thing,” Wasula said.
Other than the farmers market, Lemkos offers delivery to areas like the University of Florida dorms and nearby apartments, and now sells wholesale to local coffee shops and grocery stores, including Ward’s Supermarket.
She plans to continue to move forward without purchasing a storefront saying, “I’ve seen restaurants fail because of the rented space or anything else that goes into a restaurant.” Wasula is also able to spend more time baking and less on logistics with friends and family helping with labeling, permits, spaces to bake and feedback on baked goods.
After multiple baking jobs, Wasula believes she has created the bakery that can serve people with any baking request.
“If someone needs a certain type of baked good I’d be more than happy to do it for them,” said Wasula, adding that she wants customers to have their voice heard.
